This cake is so quick to make, you can crave it one minute and in the next hour, it's there ready to be devoured !
It's so satisfying to bake it after/during hours of cleansing the harvested berries.
Be aware that with the measurements below, you'll have a "lover's cake" aka a tiny cake for 2-4 people at the most.
Ingredients :
75gr butter
3 eggs
2dl sugar
2,5 dl flour
2 dl black currant
Recipe :
Preheat the oven on 200°C.
Start with melting the butter, then let it cool down a bit.
Mix together in a bowl the flour, the eggs and the sugar. If your butter is unsalted, add a pinch of salt to the flour. Add the cooled butter and mix with a wooden spoon.
Place baking paper in a small cake form, make sure the sides are covered as well.
Pour the batter in the form and add the berries on top of it. Bake in the oven for about 25-30 minutes (check if it's completely baked by piercing the cake with a skewer. If it comes out dry, get it out of the oven).
Let it cool down a bit on a rack before removing the form, et voilà !
