Oat biscuits

This is one of my favourite homemade snack recipes. It’s so simple and quick to make, and even quicker to eat.


 

Ingredients :
  • 140gr [3/2 cups] flaked oats

  • 140gr [1 cup] oat flour (or regular flour)

  • 75ml [5 Tbsp] olive oil

  • ½ tsp salt

  • 10 twist black pepper

  • Hot water

  • Handful of seeds

  • (more spices if desired)


 

If you’ve ever wanted to make food without precise measurements (and perhaps become one of those “pasta grannies”), this recipe is for you. As you see, the amount of water is not measured. This means you’ll have to learn by feeling how much of it your dough needs it to work. Depending on the water, it will be either too dry and too wet, but all you need to do is to add a little bit of water or flour. Worst case scenario, since it’s a basic recipe, you’ve just wasted flour, oats and water and about 30 minutes 😉

So there, you’re welcome ! I hope you can get better at “eye measuring” ingredients and be a bit more free in the kitchen. Don’t be afraid of failing, that’s how we learn !



 

Recipe :
  1. Preheat the oven to 180°C.

  2. Combine oats and flour with salt, pepper (spices) and seeds.

  3. Add oil and enough hot water to combine into a dough. When a ball is forming, stop working the dough.

  4. Leave for a couple of minutes.

  5. Roll out thinly. Cut with a biscuit cutter (or a glass) and bake on an oven tray until cooked (about 20 minutes). Check the color, when golden, take them out.


Tips : Don’t over work your dough or it’ll become elastic and difficult to roll out. I always wait a couple of minutes before checking if my dough needs more water/flour, to avoid having a very wet dough after it has rested.

Other tips : you can place as many biscuits as you can on the oven tray (with baking paper). Since there isn't yeast in them, they're not going to expend while baking. This also means you can use whatever biscuit cutter you like, they'll keep their shape !


 

Et voilà ! Homemade oat biscuits, to enjoy with cheese and jam/chutney, or just as they are, as snacks.
